This is a great vegan breakfast or dessert that can be made with a variety of different fruits. Chia seeds are full of fiber, protein and omega 3’s.
Yields 1 meal or 2 snacks
- 1 frozen peach
- 1 cup unsweetened coconut milk
- 1/4 cup chia seeds (available at health food stores and Trader Joes)
Directions: Combine all ingredients in a high speed blender or food processer and allow to set in refrigerator for three hours.
